Tie Onesie

This is my little Sugar in a onesie I created just for him.  I am so sad that regular stores don't have cute boy clothes.  They all seem to have some kind of characters on them.

Easy Tiramisu

This is a fantastic recipe for Tiramisu! My own personal recipe. :)
Ingredients:
3 large eggs  (you will be using the yolks and the whites)
1 cup coffee ( I used my favorite brand-starbucks house blend )
1/2 cup sugar
1 tbsp. puerto rican rum
8 oz. Mascarpone
Cocoa
Shortbread Cookies



















Directions:
1- Combine 3 eggs yolks, 1 tbsp. coffee, sugar and rum into large bowl.  Beat 2 - 3 mins.  Add mascarpone and beat 3 - 5 mins until smooth.
2- In another bowl, combine the egg whites and about a tablespoon of sugar.  Beat until stiff peaks form.  Gently fold into Mascarpone mixture.
3- Dip each shortbread cookie into the remaining coffee (I put my coffee into a cup so it would be easier to dunk) and put them in several small dishes or one larger one. You can make different layers with this also.  I made it where the cookies formed a crust since I didn't have a lot of cookies. I mashed them up with a fork and lined the bottom of some ceramic bowls. Add the mascarpone mixture and then sprinkle cocoa over the top.  Refrigerate at least 2 hours before serving.  The longer the better.  It is fantastic cold.
You can fancy it up by adding chocolate shavings to the top if you wish.






Side notes:
I use shortbread cookies instead or Ladyfingers because 1) I couldn't find them at my local superstore - improvise- and 2) they are really good and sweet.

I only use 1 tbsp. rum because I do not like to taste the alcohol. You can also substitute cognac or brandy instead. I just had the same rum on hand from making a rum cake a couple of years ago.  I guess alcohol doesn't go bad, right?? It tasted ok.  I will let you know it I get sick tomorrow. :)

Also, Tiramisu has raw eggs in it just in case you didn't know.

Beef Fillet Quesadillas


Let me just start with saying that my household tends to go towards chicken as the main ingredient for most dishes. Since we have moved to a small town there is a meat market that I get all of our meat from. They have fantastic steak cuts, chicken breasts, sausage, fish, pretty much anything you can think of.  I got a Beef fillet and have had it in the freezer with the intent on trying something asian..some kind of stir-fry or Fusion taco. Well I wanted to make something with it tonight but it seemed like I didn't have all the ingredients to any of the recipes I looked up. One thing I usually always have on hand is Tortillas. I always tell everyone that I think I have some sort of spanish ancestry because I am always making some kind of mexican/spanish dish.  (I would have to look wayyyy far back since I am on the pale side. :)

So here is the ingredients:  (these are the ingredients I had on hand-feel free to add or take away)

1Beef fillet
1 Bell pepper
1 Small Sweet Onion
Gouda Cheese
4-5 Sprigs of Cilantro
2 Small Sweet Peppers
Tortillas
Seasoning for your meat

This makes enough for 2-3 people

I use a Cast Iron Skillet. I Love it! It cooks meat so well.  I used a little EVOO and then added the seasonings to the skillet with the chopped Bell pepper & Onion.  Then I cut the fillet and added it to the skillet.
The seasonings I used: Pepper, salt, bbq spice rub, garlic salt 


Depending on how well you want the steak depends on the time. I like mine with just a little pink. It only took 5-8 minutes with flipping the pieces over for it to be done.  I went ahead and prepared the tortillas.

Add and distribute it to the tortillas to put together the quesadillas. I just rinsed and wiped out the skillet and used it for the tortillas. I sprayed it lightly with non-stick spray and lightly browned the quesadilla on both sides. I had some homemade salsa left from a previous meal and it was delicious.  I kind of wished I had avocado and sour cream for this too. Next time.
